When you step into Charles Pan-Fried Chicken in Harlem, New York, you will taste the owner's mother's soul food recipes. "My mom taught me how to cook," says chef Charles Gabriel. "She inspired me."

Running the restaurant is a labor of love — but make no mistake, it is hard work. Gabriel was using a pen and paper to track sales and inventory, and by his own admission, half of his day was spent on "mathematics."

Enter Chef Quie Slobert, Chief Operating Officer of Charles Pan-Fried Chicken, who first came into the fold after he heard about Gabriel feeding the homeless during the pandemic. He asked to help out in the kitchen and hasn't left since.

Slobert quickly realized that the restaurant needed help. And that help came through modernization via Square. "Square is like a whole other person that I can depend on," he says.
